Paris/Alain Ducasse's Spoon and other possibilities

After coming across the website, I am thinking that Spoon may be a restaurant we would enjoy. Upscale vegetarian options and fish. Can anyone comment on an experience there? L'Arpege sounds wonderful and similar to a dining experience we had at Aqua (Las Vegas)where we enjoyed a multi course vegetarian tasting, but also more expensive than Spoon? Can anyone tell me more about La Boissonerie -- ambiance and price range.

In addition to a splurge or two, I am also looking for other recommendations for interesting, friendly, comfortable, dining where we might have a good chance with seafood or more upscale vegetarian selections.. favorite Thai? Any regional French that would apply? Perhaps near our hotel which is the Beaubourg (recent Nat'l Geographic Traveler recommendation) right next door to the Pompidou Center.

We have four nights in Paris before flying down to Nice!
