Paris again after 8 years - itinerary thoughts?

Hi there! My husband and I are returning to Paris for the first time in 8 years next month. This board was an amazing resource for us way back then (loved Ze Kitchen Galerie and Le Reminet), so I thought I'd stop back by before this trip. A little about us- we're a mid-30s/early 40s couple from Alabama who travel with food and drink as our primary focus. We prefer convivial over formal atmospheres where we dine. We like all sorts of cuisines; nothing is off the table (except American southern food, as we get plenty of that here). Good wine and/or cocktails are also a priority.

We are arriving on a Friday morning and staying in the 3rd. Here's the itinerary so far, including holes that need to be filled.

Friday lunch - L'Enfants du Marche (need something that doesn't require reservations, and this practically across the street from our place)
Friday dinner - Open, need somewhere with no reservations required, preferably casual where a full 3 course isn't necessary. I'm thinking we might bounce around wine/cocktail bars. Our apartment is very close to Candelaria and the Red Door.
Saturday lunch - Paris By Mouth Marais tour
Saturday dinner - Open, thinking of a bistro like Le Villaret or Bistrot Paul Bert. Any other suggestions for this type of experience? Any neighborhood is fine. Good wine is a must.
Sunday lunch - Something light and inexpensive, maybe Miznon or Cafe Mericourt?
Sunday dinner - Pierre Sang Signature
Monday lunch - Mokonuts
Monday dinner - Would like Septime, but doubt that'll happen. Is it even worth trying anymore? We've not been to the 18th- maybe something there instead? Or something else from my list that's open Monday

Tuesday we're off to Chinon for a few days; we'll be back to Paris on Friday afternoon.

Friday dinner - wine bar hopping again
Saturday lunch - Baieta or L'Arcane for our last big meal
Saturday dinner - Something early in the 12th because we have an early Sunday flight. What's good around the Marche d'Aligre?

For wine bars, I have Clamato, Cave du Paul Bert, Septime la Cave, and La Buvette on the list. Any others I should add? I also have these on my list if I can fit them in somewhere.


Any thoughts/suggestions/must-dos/must-not-dos on my plan so far? I appreciate all the great input you all give on this board (and in blogs). Already looking forward to writing up a trip report when we return!
