Last night I made the vegan cream of mushroom soup from Serious Eats. There is quite a bit of prep work. It wasn't too difficult to find MISO with a hechsher. I didn't want to use wine so I just added more chicken stock and 1 tablespoon of rice vinegar,I made it meat not pareve. It was delicious but the color of the finished product was not appealing or appetizing. It is quite dark and not light beige like a regular cream of mushroom soup. However, I want to repeat that it was delicious. I think serving it with home made croutons would improve the look of the finished product.
