I've recently bought 2 types of parchment. The first is standard issue Wilton white silicon coated parchment, the second comes in an earthy box ( i think it's recycled paper) and has a light brown paper bag color. Last week in a profiterole haze, my kids and i baked several batches of profiteroles on both types. We have several ovens and many bakers, and while some turned out fine, others burnt on the bottom. The ones that burnt were on the brown parchment. The question: can the color of the parchment over-promote browning?
