Par-cooking bacon - can it be done?

I am making Devils on Horseback for part of our Easter meal on Friday, and as I have a ton of other things to do, I'm wondering if I can cook off the bacon part way tomorrow and stuff and wrap my dates ahead of time, refrigerate and then bung them in the oven on Friday. Is that food-safe, so to speak, or would it make us all sick?
