Panuchos and other recommendations

The reason I ask is that I'm going to the Peninsula for a wedding, but doubt I'll have time to eat anywhere off the grid. I'll be in Cancun for most of the stay (all inclusive) with an excursion/tour to Chichen Itza and a stop in Valladolid to eat provided by tour. The restaurant is buffet style and I just wanted to know what foods you liked more than others. I'm aware of Panuchos (I think) and another type of tortilla based dish again where the tortilla is puffed up.. maybe that is the panucho...
