Panini made with leftovers -- an improbable combination

tim irvine | Aug 18, 2013 11:55 AM

Sourdough spread with a mixture of capered mayonnaise that was used the other day with Hatch crab cakes and a little habanero ketchup, a little sliced mozzarella, thinly sliced roast pork loin, a few slices of tomato, and a topping of cole slaw made with cabbage, cider vinegar, mayonnaise, Sriracha, and turbinado sugar a few days ago. Sprayed with nonstick spray and grilled on ridged CI with a bacon press. Now the fridge is low on leftovers, but there is some broccoli left for a frittata. What sorts of leftovers do you force into gustatorial coexistence when making panini?
