Hi all, Santa brought me a very nice panini griddler for Xmas and I'm ready to start crafting sandwiches. Any favorite combos and/or breads out there?
I'm thinking various cured meats and melty cheeses, one with apple slices and goat cheese, classic tomato (when tomatoes are in season), mozzarella, and basil, and one trying to recreate these sandwiches called cemitas I ate in Puebla, with creamy refried beans and queso freseco or queso Oaxacano.
