Just before Thanksgiving I ordered the "Thanksgiving Duo" from Salumi Cured Meats in Seattle (salumicuredmeats.com) consisting of an oregano salami and a cinnamon panchetta.
The salami was really good, but...
The panchetta was fatty, salty and generally not to my liking. (I realize it is supposed to be fatty and salty) I tried several it ways ("raw", thin sliced and fried, chopped up fried and mixed in with something.) Even when chopped fine and fried it overpowered whatever I put it in.
What am I missing?
