Pan searing Foie Gras, a few questions...

My Mom asked me to prepare foie gras for her next month.

I was considering ordering a 1.4lb lobe of grade A foie for 4 people, but should I just get this:

I was also planning on deveining, but info from this website: says NOT to, if you are pan you guys agree with this?

I usually make it with sauteed apples and brandy, but wanted to try something new...So far I am thinking either port sauce or raspberry sauce.

Has anyone ordered from Bella Bella Gourmet before?
