I have found the BEST dried pasta for lasagne. It is " Lasagne con Spinaci" made by Pagani. I found it here in LA at bay Cities, $2.50 for a 1 lb box.
I followed the box instructions using a simple meat sauce made from 1/2 lb ground turkey and 1/2 lb italian sausage, 1 large can Muir glen Tomatoes (I puree in blender) fine diced onion garlic and oregano, and generous olive oil. A bechamel of flour butter 1 1/2 cups milk, 1/2 cup plain strauss yogurt, salt pepper and nutmeg. I layered this with the dry noodles, some grated fresh reggiano. Baked it (cover with foil the first half ) for 30 minutes.
This pasta is great, very,very thin ( almost translucent ) very fresh tasting and cooked this way remains al dente. This is the best lasagne I have ever made from dried noodles. I have gotten so tired of heavy noodle, ricotta, mozzerella, type lasagnes that I just don't make them any more. This has renewed my love affair with Lasagne.
