My next door neighbor and I are having a dual birthday party next weekend for about a dozen guests. We decided we'd share the cost, our friends, and the cooking. I got it into my head that I was going to use the saffron I got at Penzey's so paella came to mind. I've never made it and have decent cooking skills but now I'm running out of time. I have to go out of town this coming Wednesday through Friday and people are coming over Saturday.
Am I about to have a train wreck? Can you offer any suggestions for shortcuts? I have aborio rice. Can I substitute this for Valencia rice? Also, I have an enormous AllClad pan that my husband got me for Christmas. I'm planning on using this as I don't have a paella pan. I can't imagine an overpriced, snooty pan will ruin my paella, do you?
