paean to fresh corn

bruce | Aug 13, 2002 01:03 PM

August in UPstate NY and northern PA is time to put on a stained shirt, get oneself to a FRESH corn stand (some'll even let you pick your own)and dash to the nearest pot of boiling water available. Scald the shucked ears quickly (NEVER over-cook- 4-5 min. max.)and slather it (or not) w/ your choice of treatments...
As the swollen kernels explode in your face and the front-upper-inside gums squeak w/ delightful pain, know that IT GETS NO BETTER than this...yellow and white pearls bursting w/ sweet milk, tender hulls lodging between teeth for later-savoring, and the flying detritus that reminds you why you're eating outside (remember the stained shirt?). Not until you've finished your first 1/2 doz. is it polite to start the debate about left-to-right vs. r.-to-l.; knob-to-tip or backwards; roll up or down, or scatter-shot hunt-and-peck. Assure plenty of dental implemnts close-at-hand, cold liquids in easy reach, and towels (garden hose'll do in a pinch) nearby. Ahhh..sweet summer. Enjoy
