Pacifico Striped Bass - Ocean Farmed near Ensenada

Last week I was served Pacifico farmed striped bass (aka Lobina) three times. As ceviche at Da Toni, grilled with crispy skin at Fauna and poached and sauced at Origen @ Encuentro, the fish was delicate, sweet and delectable in each prep. It has a much cleaner taste than the striper x white bass farmed fish I've had to date. Interested in cooking with it, I looked up its website tonight.

According to the site, the fish are available throughout Mexico and the United States. Its US distributor is in Los Angeles and it supplies Whole Foods markets.
