A new vendor this year at Cloverdale's Friday Night street fair and concert is Pacheco's Roasted Corn. It also sells at other events in Sonoma County.
The corn is roasted on-site so you get to enjoy all the toasty fragrance and freshly cooked taste. The roasted corn can be ordered as corn on the cob attached to a skewer or cut off the cob in a bowl as elote en vaso. Garnishes include queso fresco, chile powder, lime juice, and mayonnaise. I like mine with all of them, and heavy on the mayo.
