What's your favorite/best recipe?

I'm looking for simple: just eggs, chicken and onions.

Which is better: yellow or white onion?

Dashi Vs. Chicken stock?

Sake or no sake?

Tips in general?

I'm sure some are taste preferences and are subjective, but I'm just trying to sort out all of the subtle differences in the recipes I've come across.
