Moved to the Pacific Northwest to discover the most AMAZING variety of beautiful mushrooms on sale at the farmer's market. With jaw firmly dropped, I bought those babies up as if I would never see them again. I bought way more than one person can eat in a sitting--and my household is sadly one person right now.
I would say I've got a pound or so of 'em. Was planning to make a mushroom risotto, but I suspect I'd have to make far more of it than I'd want to eat. Can I freeze it? If I saute them and then freeze them will they still be worth eating? Soup seems like a waste, but then again I've only had unconvincing mushroom soup before.
Any suggestion would be appreciated. I have chanterelles, a small amout of shitakes, something that's in one clump with grey 'leaves', and something that looks like a cep but has a japanese name. I'm not so good with names.
I do realise the profound stupidity of overbuying such an expensive item.
