Oven-poached chicken

I'll be making chicken salad for 50 shortly and I'd like to poach the chicken in the oven. I assume skinless boneless breasts would be best. Anyone have a technique or advice for poaching them in the oven? I'd like to avoid doing many batches of stove-top poaching. Thanks!
