Oven "fried" chicken

I need to make a mass of chicken for an upcoming event (enough to feed 30 or so). Given the occasion and rest of the menu, fried chicken would be ideal, but I don't think I can pull it off for that size crowd within the time I'll have. Does anyone have a recipe for something done in the oven that begins to approximate the Real Deal? And as long as I'm reducing the fat, what about skinning the chicken pieces first?
