I'm planning to make an orzo salad for about 12 people this weekend. The recipe calls for ingredients like feta, kalamata olives, pine nuts, red and yellow bell peppers, tomatoes, etc. It calls for 12 ounces of orzo to serve 8-10 people. Even with all the mixed in ingredients, this doesn't seem like enough pasta. While I don't want to make too much (my usual situation), I want enough to actually feed 12 decent eaters. Any advice on how much orzo to use per person?
