New Orleans for the holidays

Hello!
I have read many posts and come up with this itinerary for our New Orleans visit from 24 to 31 Dec 2010. For background, we are from England and Australia but have lived in New England for many years.
I am a vegetarian and have had a terrible time finding food in Memphis (my only southern experience so far) but I visit Montreal often and have never had a problem finding interesting French food that is vegetarian. BTW I would not go to a vegetarian restaurant.
My husband is a meatatarian and is interested in eating any and all critters.
We are looking for mid-price range interesting food, for reference our favorite restaurant so far is Bobby Flays Mesa Grill in Vegas. We had lunch at the bar on our last Christmas vacation and it was SUPERB.
This is my initial plan for the main event each day, I will fit in breakfasts, po'boys etc wherever we find ourselves each day. We are staying at Le Marais in Rue Conti.
What I would like to know is:
Have I missed anywhere or is there anywhere you would swap out for a better experience?
Will I be OK to find SOMETHING vegetarian on the menus ( 2 appetizers is fine)?
And finally can you recommend a nearby bar for each restaurant for a drink before dinner or lunch? (I love the sound of the Loa Bar in the International House Hotel).

Tuesday 28 December - August for lunch (2pm)
