New Orleans Fish

Neil Merlow | May 1, 2002 02:08 PM

I have noticed that in many parts of the United States fish in resturants are serve with the head on. I don't think I have ever seen that in New Orleans. What is the reason for the head being left on the fish? And why not in New Orleans. Thank you in advance.
