New Orleans cookbooks (referencing General Topics thread)

Okay, yall, seems we're missing a big Cajun/Creole category in the cookbook thread linked below. We deserve our own category! So, for us New Orleans natives or locals especially, what all are your tried and true Cajun or Creole cookbooks, and which are your favorite recipes?

For this New Orleans native, my cookbook list is:

Plantation Cookbook (NO Junior League) -- everything just works, but my return favorites are the chicken liver pate, shrimp creole, and grillades. Their red beans recipe is really close to the one passed down in my family.

River Road (also JLNO, I believe) -- just the Spinach Madeleine recipe makes this cookbook worthwhile. Lots of other treasures.

Paul Prudhomme's Louisiana Kitchen -- crawfish magnifique is an all-time favorite, as are shrimp diane and sauteed crawfish. As I remember, the rice and cornbread dressings are pretty close to family recipes.

Talk About Good (JL Lafayette) and the Entergy cookbook
are good references, and I sometimes find myself splitting the difference between their less complicated and more 50's style recipes and more involved versions.

How 'bout yall? Let's annotate the FAQ with our Creole/Cajun favorites! Which recipes are your "cook again and again" from the best? I haven't gotten anywhere near the level of "through" these cookbooks as I'd like, and tend to revert to recipes I grew up with.
