Oriental food - beginner's tips, please

Help! I have to 'fess up that I know very little about chinese (or thai, vietnamese etc) food and want to pick fellow Hounders' brains. I go to chinatown, get dazzled by the choice and end up eating singapore fried noodles in Wong Sei, while feeling envious of all the interesting other things fellow diners have ordered.

So can anyone recommend a programme in which dishes to try? I love spicy, curries, noodles (not the thick ones!) rice - basically anything, except batter and pancaky stuff - which i guess rules out a lot of dim sum? (feel free to correct me!) I've visited malaysia twice and loved the food there - but apart from gori nasang can't remember the dishes!

If anyone can suggest some soho/islington places and particular dishes so I can start eating in earnest that would be great
