I read here about asking for outside brown when ordering Lexington style BBQ, for crispy texture and flavorful seasoning. Do those advantages trade off with moistness? (If not, why doesn't everyone order outside brown all the time? In which case, I'd think it wouldn't persist as a thing one could order...)
As a visitor, I won't have unlimited opportunities to sample and hone in on my preferences, so optimize my BBQ, please!
