If I somehow won the lottery and I was to invest in opening up my own restaurant, I would open up my own Filipino restaurant. Filipino cuisine isn't really represented very clearly here in the USA and I think it'd be great to open up a restaurant in a style of Chipotle. It's faster service and more mainstream. It'd be a good way to really expose people in Filipino Food. It wouldn't be with tacos or burritos but more like rice or noodles. Your choice of meat, vegetables, and sides. (Adobo, lumpia, pancit, all good candidates).
Either that or I would open one up a small restaurant, very similar to Maharlika in NYC. I really like the modern twist they added and I enjoyed the small, quaint atmosphere it had.
I wouldn't necessarily open one up right away. I would definitely enroll in culinary school first.
