I have quite a few heirloom onions - red, white and yellow. Any recipe suggestions? I don't like raw onions and it is too hot for soup.

I'm thinking either baked or sauteed. I have olive oil, basil, paprika and wine available. Tommorrow is the farmer's market, so I could pick up some vegetables to go with the onions. Any suggestions?

Right now I'm thinking of frying with mushrooms and basil in olive oil. Never tried basil with this combo before.

I know some of you fry onions and keep them in the fridge quite a while, but for me, I know realistically that they will go from stove to fridge to garbage. Need a dish I can eat in a day or two.
