Former Omnivore looking for tastiest meat substitutes

Hi everyone. Can folks give me their recommendations for the most 'authentic' tasting/looking meat substitutes (please include exact name/brand, etc.)? Specifically I'm looking for substitutes for when I am:

making a 'chicken' salad

making meatballs to go with spaghetti sauce

making a dish that would normally contain crumbled 'ground beef' ...stuffed cabbage for e.g., lasagna, etc.

making a full 'weekend brunch' menu, and want something to replace the usual sausage or bacon...

Thank you!!

P.S. Most of my shopping is done at local natural food stores, Whole Foods or Amazon, so any brands found at BJ's, Costco or other 'big box' stores won't work for me. Thanks!
