In light of the recent threads on this topic, i thought i'd ask about how one orders a "true" omakase. i have, in a number of restaurants ordered an omakase that consisted of a large plate of an assortment of various sushi and sashimi. i believe that in order to get the true, one piece or couple of pieces at a time service, i have to sit at the sushi bar. do i order from the chef himself or from a waitress? must i say the magical word "omakase" or do i explain my budget and ask for fish until i'm out of $$?
also, how do i make sure that i get some of my favorite fish in addition to what the chef wants to serve me?
