Tonight I cooked from Jamie Oliver's Kitchen (a steal at $13.95 used but like new on Amazon).
We had scallops (and shrimp which I added) wrapped in pancetta and fried in a non-stick pan. You first roll the scallops in a bit of olive oil with chopped fresh thyme, then you roll them in the pancetta and brown them. He serves them with mashed celeriac but I only had some Full Belly Farm spuds which I mashed. With a big green salad (also with FBF lettuce) it was a delicous meal.
I also made his hazelnut tarte. It's more of a cake along the lines of Nigella/Claudia Roden'sorange cake made with ground hazelnuts instead of almonds as in Nige's. Very simple. Ground toasted hazelnuts, a couple of tablespoons of flour, butter, eggs, a bit of sugar, whipped egg whites folded in with grated orange rind. Cook for 25 mins. Cool a bit and then brush apricot jam over and grate bittersweet chocolate on top of that.
I just ate 2 pieces!! I absolutely love this kind of cake. It's almost like a pudding it's so moist. Along the lines of Claudia Roden and Nigella's orange cake made with ground almonds.
