Office Thanksgiving potluck ideas please!

chitodc | Nov 9, 200906:24 AM     20

My office is having its annual Thanksgiving potluck, and in past years I've kinda copped out and brought store-bought stuff, but this year I have a lovely brand new kitchen and I'd love to make something. The things that are making it harder for me to think of what to make are: 1) it has to be something I can make the night before and carry on a crowded Metro, and 2) I won't have access to an oven (microwave only) after I get to work and the meal will start about 4 hours after I get in. I'm considering cranberry sauce, or a salad with dressing I can bring in on the side, but I'd love to make a more substantive Thanksgiving-y dish. Any suggestions? (Or if this is a topic that's rehashed every year and I just used the wrong search terms, if you could point me to the right thread that would be equally appreciated). Thanks!
