I was making the roasted eggplant salad from the Pham (Vietnamese) book last night, but had tiny eggplants, rather than the long thin ones. I usually rest them on top of the gas burner, turning occasionally. But, these little ones simply would not "stay". So, it occurred to me to get out my collapsable roasting rack, and I put it flat, on top of the burner. It worked perfectly, and I roasted the six little eggplants this way, turning occasionally.
