The wife and I have a celebratory meal coming up in New York. Despite having lived there for a while, we never went to any of the more formal or expensive joints. So, we both would like a tasting menu, but have slightly different priorities, and would prefer to not end up at separate restaurants. I'd like relatively fast pacing (e.g., more like the pace of tasting menus in Spain, not those in France). She'd like a generous cheese cart. I've read some older posts on here about cheese carts, and some notes about tasting menus with more courses, but am having trouble figuring out the latest and greatest intersection between cheese carts and pacing. Any advice is appreciated. Thank you in advance.
