Hi New Yorkers!
I'm about to pull the trigger on buying a little sandwich shop, which I would ultimately like to transform into a late-night spot featuring Spanish-inspired snacks. The place has a beer and wine license and is in a great location for nightlife traffic, but has a tiny kitchen with no range hood, so equipment is limited to countertop electrical appliances.
Before I take the plunge and start working 70-hour weeks, I'm visiting friends in NYC for a week and will also take the opportunity to do some research. What food businesses do you think do a great job with minimal space, equipment, or other logistical constraints? I'm interested in all cuisines and price points, but anything with similarities to the concept described above would be especially great to know about.
FWIW I'll be staying on the Upper East Side, but can go anywhere in the five boroughs.
