NYC 'Hound heading to LV for 5 yr anniversary -- where to eat?

We're planning to go to LV in late October for our 5 yr anniversary, mostly because we're interested in checking out the great restaurants. We'll probably stay somewhere on the Strip for 3 nights (we're thinking Four Seasons or THEHotel at Mandalay Bay, which we realize are a trek, but, hey, we figure we'll need the exercise). The only other time we've been in LV was for 1 day 10 yrs ago, when we stayed at the Excalibur (gulp), so we are looking forward to a higher caliber stay this time.

We're interested in eating experiences that we can't get in NYC, so NYC offshoots like Aureole and Mesa Grill are out. We've dined at Bouchon in Napa Valley, so we figure we can pass on the one in LV at least for now. I figure that a place like Picasso would be at the top of my wish list for a blow-out dinner on our actual anniversary. I'm also thinking we could fit in one meal off the Strip, and judging from this board the best candidates for that meal would be Lotus of Siam or Rosemary's.

So if you were me and had three days to splurge in LV, where would you dine? How far in advance should (or can) you make reservations? And where should we go for breakfast/lunch/snacks? TIA.
