NY Times eggplant and ground lamb recipe - cheese substitute?

This recipe looks very good to me, and the sort of thing my guys would like. Any suggestions for a substitute for the mozzarella cheese that's added on top towards the end? I guess I could skip it altogether, but I think it might not look appealing. Is there smething with a similar texture, or something else "white"?
