Thanks so much for all of the suggestions. Here's what I did -- air dry them on a rack in the fridge for an hour then bring them to room temp. Removed the bones and roasted those with salt and pepper in our large toaster oven (I was using our oven for homemade rolls), and my sons and I enjoyed that pre-dinner treat. I wound up using my stovetop grill pan as I couldn't find a cast iron pan to buy yesterday. I got it smoking hot, sprinkled it with some salt, sprinkled the meat with salt, pepper, and the teeniest amount of sugar as suggested. Did 3 minutes on one side without touching them, turned with tongs. Beautiful grill marks. Turned over and then cooked them a bit too long for my taste. They came out medium instead of medium rare. I got distracted by an "important" phone call. But they were still very very good. Served them with a broccoli-potato puree that was out of this world and homemade rolls. This was a "welcome home" dinner for my husband who'd been away a couple of days and he was most delighted!!
