Does anyone happen to know the nutritional content of pork skin? Not crispy fried pork rinds nor the cracklin' on a nice roasted pig, but the blanched squishy kind of pork skin you might find in Asian soups. Or in the Vietnamese dish called "bi" that consists of julienne of pork skin and pork meat tossed with toasted rice powder (commonly eaten with broken rice). I'm hoping there's not too much fat involved. It doesn't seem like it but you never know.
