Nova Scotia/ Gaspe food (poutine equivalent?)

Last summer, my husband had the pleasure of touring the Gaspé peninsula, and living almost entirely on poutine- essentially french fries with gravy from local chip wagons, but *WHAT* french fries and gravy - or french fries with gravy, chicken and peas, or spaghetti sauce and mozzarella - it was *quite* intriguing.

This September, we'll be going to Nova Scotia. I've read about rappie pie and such - but is there some other omnipresent, cheap regional snack that we need to investigate?
