OK Norwegians...polsa? Xmas sausage!

Looking for the proper ingredients and spice mixture for polsa xmas sausage. My SO got a shipment not up to snuff - seems the brilliant sausage maker of her Minnesota childhood has passed on - so what is supposed to be in this stuff to make it flavorful?!

It's a fine grind mix of beef and pork, and we are figuring what we got was too beefy. But the spices...she said it used to be good enough to eat alone, but now mustard must be employed...

We're thinking we can put in an order for the old style if we know what to ask for....so calling sausage masters and old Norwegians and those who love them...
