Have the noodles improved at Momofuku?

hungrycomposer | Jan 8, 2008 09:18 AM

I had lunch yesterday at Momofuku, and after complaining about their mushy noodles in the past, I have to say that they were perfect... I always loved all of the other ingredients, but the ramen itself left me cold. I had the combo pork ramen, with its delectably fatty pork belly and shredded pork, wonderful broth, and for once, the noodles weren't overcooked. My brother ordered the duck leg ramen, which had the most amazingly rich, fragrant broth; noodles that were about as thick as fettucine (the waiter said they called them ramen, but they were closest to Shanghai noodles); and a generous, fat duck leg. One thing I love about this place is that they are not afraid to change their menu and make improvements.

Still, I was curious: have others found that the noodles have improved, or did I just get lucky at lunch?
