I'm sorry I should not try to answer a question after wine with dinner. The whipped cream for the cinnamon ice cream should not be stiff, it should hold soft peaks which will drop heavily froma spoon. Beat the egg (lg) yolk in a bowl, then slowly whisk in the scalded half and half so you don't end up with cooked egg bits. I let the scalded half and half cool a bit before adding it to the yolk.
