I love nigiri sushi, but am still a relative novice to some types.
Recently I've noticed more places offering "white tuna", or "marlin", or "mutsu", and I suspect that all of these have been escolar, or snake makeral (butterfish?). I've read that white tuna should be albacore, mutsu should be bluefish?, and I'm not sure about marlin.
Anyone have the definitive source on the names for various nigiris?
If it's all escolar, it is reputed to be so high in fat that it couses gastrointestinal distress and has been banned in Japan. Is this true, out of date, or an urban legend.
Anyone care to weigh in?
