A Tulane colleague...originally a NJ Italian kid...washed up in DC years ago and just wrote to say he'd taken the family to " a New Orleans place in Maryland" that gets reviews marked by delirium of orgiastic ecstasy. Said it was horrific. Seafood gumbo with no roux (I don't care what Paul Prudhomme said in order to sell cookbooks), RBR that was "beans with red gravy" and jambalaya that was "rice with tomato." Said it bore no relation to the lowliest Ozanam Inn Soup Kitchen effort.
We must be ever-watchful that invasive species do not bring their notions of what food is to our shores.
