Newly Vegan and travelling with Family

So I've recently cut meat out of my diet as well as most other animal products based on ethical reasons and a desire not to contribute to the whole industrial meat complex. I still eat some dairy and eggs purchased from local humane sources, but try to avoid them while eating out. Normally this isn't a problem, because I mostly cook my own meals or select places with vegan options.

However, I'm going on a trip to Disney World with my parents and two young nieces. My parents are not adventurous eaters--they have come back from trips where they circumnavigated the globe and will tell me that their favorite meal was the day they found the Subway in Dubai. My nieces are both picky 6 and 5 yr olds, who mostly only eat cheese and white flour (mac and cheese, grilled cheese, cheese pizza, quesidillas, etc) So I do forsee eating at Subway a fair amount.

Any survival tips for traveling with pretty non-supportive family while being vegan?
