Newbies - want something different & fun

Hi All - My girlfriend and I are visiting Las Vegas for the first time. We'll be in town for dinner on a Thursday in late June. I'd like to do something more fun than pricey, and different than what I could eat in NYC/DC. (So no Jaleo, Morimoto, etc. I think?) We eat everything/anything although it's her birthday so decent dessert options are a nice feature, and we'd like to have a nightcap or two somewhere else afterwards.

We're staying a little off the strip and heading out to the Grand Canyon the next morning (North Rim). Would welcome any lunch ideas - looks pretty desolate that way - as well.
