What exactly is neutralized goose?

Last night I had dinner at Mei Long Village. One of the dishes ordered was "Neutralized Goose." It seemed to be a cut roll of layered thin sheets of firm tofu wrapped around chopped mushrooms. I couldn't find any sign of goose. It tasted pretty bland with only a hint of mushroom. More about the texture than the flavor.

Despite jokes about what "neutralized" meant among our party [Tastes like pH 7; neutralized to nonexistence of the goose taste; etc.] we neglected to ask the waiters themselves. So anyone know what this is and how it's prepared?
