Make your favorite yeast roll - and add chopped nettles into the dough.
For handling the nettles - pick carefully - not sure I'd go for the 'grab violently' method - rinse if needed - let excess water dry till they are more or less as picked - whack in micro for 30 seconds - pull off leaves and chop.

Baking soda paste helps with any stings if they occur when picking.
