Needing some inspiration tonight

I have this delicious piece of cured cooked pork loin.
I'd like to use some of it tonight. I don't want to make 'ham and eggs' or any variation on it.
I have sticky rice and potatoes in the house. Getting fresh veg today.
I'm open to any suggestions.
I'll cube or slice the loin......whatever.
