Navaho Tacos

I got a blast from the past. Ten years ago we floated the Grand Canyon and in a little town (can't even remember the name) there was this little local cafe that served Navaho Tacos. They were a fluffy, almost pita-like bread with saucy pinto beans, lettuce, onion, tomato and cheese on top. You ate it with a fork and knife. It's something I've craved ever since.
